The individual character of each tea is a result of the region it was grown in, the part of the plant used, and the processing methods utilized. Oolong leaves are picked after the rains and are larger and more mature than those of green tea. The leaves are partially oxidized and then roasted. Oolong is drunk widely throughout China and Taiwan as has a earthy, satisfying taste.

This famous rare green tea comes from the mountains of Dongting near Wuxi, west of Shanghai. It is grown in an area surrounded by peach, plum and apricot trees. The tea absorbs the fruity aromas of the region and has a unique, delicate and sweet taste. This tea is made only once a year from the tender shoots – silvery down of unopened buds and one single leaf half unfurled. The leaf is tiny and comes out spiral shaped. Since this tea is so delicate and is curled, it had been given the name ‘Bi Lo Chun’ which literally translates as “Green Snail Spring”.

Plucked young green tea leaves are hand rolled with fragrant jasmine blossoms into small round pellets or pearl shaped balls. This scented tea is soothing with a delicate floral aroma. It even freshens the breath after eating strong tasting food.
